    4 x 35g scoops Soft Scoop Vanilla Ice Cream

    400ml Pineapple Juice

    400ml Lemonade

    50g fresh or tinned Pineapple

    10g fresh Mint

    Method

    Place a scoop of vanilla ice cream into the base of 4 small tumblers.

    Fill each glass halfway with pineapple juice.

    Top each glass with lemonade.

    Garnish with a slice of pineapple and mint leaves.
