A refreshingly simple Orange, Pomegranate and Mozzarella Salad.
4 x Navel oranges
2 x 80g packs pomegranate seeds
2 x 125g packs Specially Selected Buffalo Mozzarella Minis
100g baby spinach leaves
1 x large red onion
For the Dressing:
1 x heaped tsp Dijon mustard
½ tsp paprika
30ml white wine vinegar
15ml Specially Selected maple syrup
45ml olive oil
Sea salt and black pepper
Peel the oranges whole, cutting around the orange and removing the white pith as well as the peel and slice thinly
Peel, and thinly slice the red onion
Drain the mozzarella and cut the minis in half
Mix the oranges, pomegranate seeds, spinach, mozzarella and red onion in a bowl
Put all the ingredients for the dressing into a kilner jar, season and shake well
Serve the sald drizzled with the dressing
