1 x 1.3kg Approx Gammon or Ham
2 x 80g packs pomegranate seeds
125ml Maple syrup
1 x tsp Dijon Mustard
½ tsp ground ginger
Preheat the oven to 180°C/350°F/Gas 4.
Remove the ham from the packaging and put into a baking dish.
Cover loosely with foil and bake for 120 mins.
Meanwhile put the pomegranate seeds and the maple syrup in a small saucepan - slowly bring to the boil.
Cook for about 7 mins until thickened – take the pan off the heat and stir in the mustard and ginger.
Once the ham is cooked – remove from the oven.
Spoon the pomegranate glaze onto the top of the ham.
Cook for a further 30 mins – basting as you cook.
Serve hot or allow to cool and serve.
