2 x 150g packs Has No Gluten Free Ginger Cookies
397g tin Condensed Milk
300ml Double cream
25cm loose based or spring form cake tin
Blitz the biscuits in a food processor into fine crumbs.
Melt the butter and mix with the biscuits.
Press this mixture over the base of the cake tin.
Finely zest and juice the limes.
Whip the cream lightly and fold into the condensed milk with the lime juice and zest.
Spoon the mixture over the base and refrigerate for a couple of hours before serving.
