Roasted Gammon with Kale and Chick Peas and a Mango Salsa
1 x 750g Gammon Joint
2 Royal Gala apples
1 tsp runny honey
1 bag kale, washed and patted dry
2 tbsp olive oil
1 can chick peas, drained
1 – 2 tbsp green pesto sauce
1 mango, peeled, stoned and chopped
2 kiwi fruit, peeled and chopped
1/2 tsp chilli flakes
1 tbsp freshly chopped coriander
juice from ½ lime
1 tbsp olive oil
Pre heat oven to 180C/160C fan/gas 4
Cover the gammon loosely with foil and roast for 1 hr, as directed on the packet.
Whilst the gammon is cooking prepare the salsa by mixing the salsa ingredients together and adding seasoning to taste.
After an hour cut the apples into wedges, remove the foil, and add the apples to the gammon.
Drizzle them with honey and cook for a further 30 mins.
Around 5 mins before the end of cooking time heat the 2 tbsp olive oil in a large pan, add the kale and chick peas and cook over a medium heat stirring gently until the kale is tender.
Stir through the pesto sauce and serve with sliced gammon, apples and salsa.
