400g rooster potatoes (2 medium)
250g sirloin steak, sliced into strips
1 bunch spring onions, chopped
1 red pepper, deseeded and chopped
10 mushrooms, sliced
4 tablespoons sweetcorn
Food Staples:
4 tablespoon oyster sauce
2 teaspoon reduced sodium soy sauce
1 tablespoon honey
1 tablespoon rapeseed oil
1 tablespoon ginger
Preheat oven to 220C /200C Fan / gas mark 7
Place 2 medium potatoes on a baking tray - pierce with fork and bake for 45 minutes until cooked through
To make the marinade combine the oyster sauce, soy sauce and honey in a bowl
Add the steak strips to the bowl and coat with the marinade
Add the rapeseed oil to a pan over medium heat and add the spring onions, chopped pepper, mushrooms, sweetcorn and ginger and cook for approximately 5-7 minutes
Add the beef strips and cook until meat is cooked through for a further 5-7 minutes
Take baking tray with potatoes out of oven and serve alongside the beef and vegetable mix
