Cook up the perfect Lamb Joint with our choice of 3 Lamb Seasoning recipes.
1 x shoulder lamb joint or ½ leg lamb – approx. 1.5kilo
Seasonings
Herby Lemon -
Juice and grated rind x 1 large lemon
10ml olive oil
1 x level tsp garlic granules
1 x level tsp dried thyme
1 x level tsp oregano
2 x sprigs fresh rosemary finely chopped
Sea salt and black pepper
Middle Eastern -
Juice and grated rind x ½ large orange
1 x level tsp ground coriander
1 x level tsp chilli powder
1 x heaped tsp ground cumin
1 x level tsp ground ginger
1 x level tsp cinnamon
BBQ -
1 x heaped tsp English mustard
25g tomato ketchup
75ml apple cider vinegar
1 x level tsp ground black peppercorns
1 x heaped tsp smoked paprika
25g light brown soft sugar
Preheat oven to 200c/400f/gas 6
Put the joint in a roasting dish
With a sharp knife cut some slashes into the skin
Mix together all the ingredients of the seasoning you want to use
Rub into the cuts and over the top of the lamb
Roast in the oven for 90 to 120 mins depending on how you like your lamb cooked
Cover loosely with foil after half the cooking time
Allow to rest for 20 mins before carving
