Vegan Pigs in Blankets

Ingredients

  • 6 Meat Free Vegan Sausages
  • 6 thin slices Aubergine, cut lengthways
  • 60g Roast Pepper Houmous
  • 20ml Lemon Juice
  • 20ml Olive Oil
  • 50g Pomegranate Seeds
  • Black Pepper

Method

  1. Pre-heat the oven to 200°C/Gas Mark 6.
  2. Griddle the aubergine slices on both sides, then wrap one slice around each sausage.
  3. Bake on a baking tray in the oven for 20 minutes.
  4. In the meantime, mix together the houmous, olive oil and lemon juice, season with some pepper and serve alongside the pigs, scattering with the pomegranate seeds.
