Cauliflower Cheese

Ingredients

  • 1 large Cauliflower
  • 50g Plain Flour
  • 500ml Whole Milk
  • 50g Butter
  • 125g Mature Cheddar Cheese
  • 1 tsp Dijon Mustard
  • ½ tsp Paprika
  • Salt and White Pepper

Method

  1. Pre-heat the oven to 200°C/Gas Mark 6.
  2. Cut the cauliflower into quarters. Boil in some salted water for 5 minutes, then drain well and put into an ovenproof dish.
  3. Melt the butter in a medium saucepan, add all of the flour and cook on a light heat for a minute. Then, add the milk slowly and whisk as you bring to the boil and cook for a couple of minutes on a light heat. Add the mustard and 100g of the grated cheese. Season with a little salt and some white pepper.
  4. Pour the sauce over the cauliflower, sprinkle with the extra cheese and the paprika. Bake in the oven for 20 minutes.
