Carrot Shaped Sharing Cheeseball

Ingredients
- 600g Full fat cream cheese
- 120g Red Leicester Cheese
- 3 x Spring onions
- 1tsp Garlic granules
- 1tsp Red pesto
- 40g Fresh parsley
- 10g Thyme
- 10g Rosemary
- 30g Black olives
- 1/2 tsp Cracked black pepper
- A pinch of Salt
- Crackers, olives, tomatoes and crudités of your choice to serve
Method
- Finely grate the cheese into a bowl and set aside.
- Chop the olives (reserving one if you want to create Kevin’s eyes and mouth).
- Finely chop the spring onions, rosemary, thyme and 10g of parsley, place all into a large bowl.
- Add 40g of the grated cheese, 600g cream cheese, garlic granules, cracked black pepper, 1tsp red pesto and a pinch of salt.
- Mix through with a wooden spoon until well combined.
- Spoon the mixture onto a large serving board, moulding it into a carrot shape using a butter knife, sprinkle over the grated cheese.
- Trim the parsley slightly and push it into the top of the cheese ball to create Kevin’s hair.
- Reserve an olive if you’d like to add a face to the carrot.
- For his eyes chop the top and bottom of one black olives and then cut the remaining middle into 3 circles.
- Use two for the eyes and then cut one in half across the hole to make his mouth press these onto the carrot.
- For his arms and legs chop a small carrot or crudité of your choosing into 4 tapered batons and press it into the cheeseball.
- Arrange your crackers and crudités around the cheeseball.
