Cauliflower Shawarma Wraps

These quick and easy wraps make the perfect meat-free dish.

Ingredients
- 1 Cauliflower, broken into florets
- 1 Heaped tsp Paprika
- ½ Flat tsp Chilli Powder
- 1 Heaped tsp Ground Cumin
- ½ Flat tsp Turmeric
- 1 Flat tsp Garlic Granules
- ½ Flat tsp Ground Black Pepper
- ½ Flat tsp Ground Ginger
- Good Pinch Ground Cinnamon
- ½ Flat tsp Salt
- 80ml Sunflower Oil
For the wraps:
- 4 Plain Flame Baked Folded Flatbreads
- 200g Cherry Tomatoes
- ½ Cucumber
- 15g Fresh Coriander
- 1 Red Onion, Finely Sliced
- 100ml White Wine Vinegar
For the dressing:
- 75g Houmous
- 30ml Lemon Juice
- ½ Flat tsp Paprika
Method
- Place the onion and vinegar into a bowl and set aside to pickle, stirring occasionally.
- In another bowl, add all the spices and the oil for the cauliflower.
- Add the cauliflower florets and rub in the oil and spices.
- Cook in the air fryer for 20 minutes at 200°C/Gas Mark 6, shaking the drawer every 5 minutes.
- In the meantime, finely chop the cucumber, tomatoes and coriander and mix in bowl.
- In another bowl mix the houmous, the lemon juice and paprika.
- Place some cauliflower on each flatbread with salad and onion rings, then drizzle over some dressing.
