Festive Broccoli

Ingredients

  • 200g Tenderstem Broccoli
  • 30g Walnuts
  • 20g Soft Brown Sugar
  • 1 X Large Clementine
  • ½ Tsp Paprika
  • 10ml Olive Oil – Plus a little extra
  • Salt and Black Pepper

Method

  1. Oil a frying pan lightly and cook the walnuts till slightly browned – sprinkle over the sugar and cook till melted – allow to cool.
  2. Grate the clementine and juice.
  3. Cook the broccoli in some boiling salted water till just tender – drain.
  4. Chop the sugared walnuts.
  5. Put the broccoli on a warm serving platter.
  6. Scatter over the grated rind.
  7. Mix the oil, clementine juice and paprika together – season and drizzle over the broccoli.
  8. Serve topped with the candied walnut crumb.
