Pigs in Blankets Tray Bake

The combination of savoury sausages and flaky pastry makes this recipe a crowd pleaser.

Ingredients
- 9 Chipolatas wrapped in bacon
- 350g Maris Piper Potatoes, peeled and cut into chunks
- 350g Sweet potatoes, peeled and cut into chunks
- 2 Red onions, skin removed and sliced into 12
- 150g Brie, cut into chunks
- 3 tbsp Cranberry sauce
- 100g Day old Breadcrumbs, any bread will work
- 20g Fresh rosemary, stalks removed and torn into small sprigs
- 10g Fresh parsley, roughly chopped
- 4 tbsp Olive oil
- 1 tsp Paprika
- 20g Grated grana padano
- You will need a casserole dish around 36 x 26cm, or a square dish of around 30 x 30cm.
Method
- Preheat the oven to 220°C.
- Microwave the potatoes in a large bowl on high for 5-6 minutes.
- Place the potatoes in the tray with the onions, 3 tablespoons of oil and half of the rosemary, season well and roast for 15 minutes.
- Toss the potatoes and onions well, then arrange the chipolatas on top and roast for a further 20-25 minutes.
- Once the chipolatas are looking nicely browned, spoon on the cranberry sauce and add the Brie, parsley, breadcrumbs, Grana Padano, paprika, a drizzle of oil and bake in the oven for a further 6-10 minutes, until the cheese has melted.
- Serve with the extra sprigs of rosemary.
