Mini Chocolate Wreaths

Ingredients

  • 200g Dark chocolate
  • 25g Salted butter
  • 1 tbsp Golden syrup
  • Zest of 1 orange
  • 120g Cornflakes
  • 50g Dried cranberries
  • 50g Pistachios, shelled and chopped

Method

  1. You will need two baking sheets lined with greaseproof paper.
  2. Break the chocolate into pieces and place in a bowl over a pan of simmering water, as it begins to melt, add the butter and the syrup and remove from the heat when the mixture is fully melted and well combined.
  3. Stir in the orange zest and cornflakes and fold in half of the pistachios and half of the cranberries, reserving a little of each for decoration.
  4. Divide the mixture into 9 equal spoonfuls and make a hole in the centre using a teaspoon.
  5. Decorate with the cranberries, pistachios and festive sprinkles (optional) and allow the wreaths to set for 1 hour in the fridge before eating.
