200g cooked pork *Leftovers from last night’s dinner
1 head bok choy, cut into sections
2 scallions, chopped
100g wholewheat spaghetti
Food Staples:
2 tablespoons reduced sodium soy sauce
2 tablespoons olive oil
1 teaspoon minced ginger
1 teaspoon Chinese five spice
Add the wholewheat noodles to a pot of boiling water and simmer until cooked for approximately 10 minutes
In a bowl combine the soy sauce, minced ginger and five spice to make the marinade
Add the cooked pork to the bowl and coat with the marinade
Add olive oil to a pan and add chopped scallions and bok choy.
Cook until tender for approximately 3- 5 minutes
Add the pork mixture to the pan and cook for 5 - 10 minutes over medium heat
Serve the pork mixture with the noodles
