    Salmon, Egg and Parsley Bagel

    1 x 100g pack Smoked Salmon

    2 large Eggs

    2 Bagels

    1 Avocado

    1.5g fresh Parsley

    10ml Lemon Juice

    Sea Salt and Black Pepper

    Method

    Boil a saucepan of water with a little lemon juice.

    Crack and then drop in the eggs and boil gently for a couple of minutes until they’re just set.

    Meanwhile, toast the bagels and peel and smash an avocado with a small squeeze of lemon juice.

    Spread the avocado on top of the toasted bagel and fold a piece of salmon on top.

    Lift out the poached eggs and put them on the salmon, then sprinkle with salt, pepper and parsley.
