Pea green pancakes mixed with spring onion for a unique, fun snack.

    200g Frozen Peas, defrosted

    125g Plain Flour

    ½ tsp Baking Powder

    2 Garlic Cloves, peeled and finely chopped

    2 Spring Onions, finely sliced

    2 Eggs

    40ml Greek Yogurt

    Sea Salt and Black Pepper

    Olive Oil



    Place the garlic, spring onions, half of the peas, eggs and yogurt into a small blender or Nutribullet and blend to a purée.

    Add the flour and baking powder to a bowl, season with some salt and pepper and whisk, then fold in the pea purée.

    Heat some olive oil in a non-stick frying pan and fry dessert spoon-sized rounds of the mixture for a couple of minutes on each side.

    Keep warm while you cook the rest.

    Great served with tomato salsa and Parma ham.
