Fresh asparagus tips baked in a breadcrumb and cheese mix until gold and crispy.
250g Asparagus Tips
100g Plain Flour
150g Fresh Breadcrumbs
45g Parmigiano Cheese, finely grated
3 x Medium Eggs
2 x 200g packs Tomato Salsa
Sea Salt and Black Pepper
Pre-heat the oven to 200°C/Gas Mark 6.
Whisk the eggs in a bowl. Put the flour in a separate bowl and season with some salt and pepper. Mix the grated cheese with the breadcrumbs and put in another bowl.
Have some greased baking sheets ready.
Run the asparagus under some water, just to dampen. Then dip in the flour, then the egg wash and then the breadcrumbs. Put them on the baking sheets.
Bake in the oven for 12/15 minutes, until golden brown and crispy.
Serve with tomato salsa.
