    Overnight Oats

    120g Porridge oats

    100g blueberries

    320g Actileaf blueberry soy yoghurt

    ½ Honeydew melon

    2 x oranges

    60g pomegranate seeds

    2 x green apples

    200g strawberries

    320ml almond milk

    Method

    Mix the oats with the yoghurt and the milk in a bowl.

    Stir in the pomegranate seeds and 80g blueberries.

    Clingfilm or transfer to 4 individual bowls and cover those.

    Put in the fridge over night to set.

    Peel and cut the oranges into segments.

    Scoop out the melon flesh –discard any seeds.

    Wipe and chop the strawberries.

    Slice the apple and discard the core.

    Serve the porridge topped with the prepared fruits and serve.
