Sweet and sticky, Honey Garlic Chicken in a delicious mixture of soy, garlic and honey.
400g Chicken Mini Fillets
100g Cornflour
80g Cornflakes, crushed into a powder
2 Medium Eggs
2 flat tsp Smoked Paprika
½ tsp Chilli Powder
Sea Salt and Black Pepper
3 cloves Garlic, peeled and minced
30ml Light Soy Sauce
45ml Sweet Chilli Sauce
20ml squeezy Honey
Juice ½ Lime
25g Salted Butter
15ml Vegetable Oil
To Garnish:
1 Spring Onion, wiped, trimmed and finely chopped
Fresh Coriander
Get 3 medium bowls.
Crack the eggs, chilli powder and paprika into one bowl and whisk well.
Put the cornflour in another bowl.
Put the crushed cornflakes in the last bowl.
Dip the chicken fillets in the flour, then the egg wash then the cornflake powder.
In a jug mix the garlic, honey, lime juice, chilli and soy sauces.
In a large frying pan heat the oil and butter, then fry the fillets for 3-4 minutes each side.
Add the sauce from the jug, and heat until the sauce is bubbling.
Cook the fillets in the sauce on a medium heat, so as not to burn the honey, for another 4-5 minutes, turning the chicken a couple of times.
Serve the sticky chicken fillets on a bed of rice, and decorate with some spring onion and fresh coriander.
