Meat-free healthy summer tacos filled with fresh veg and spices and wrapped in lettuce.
1 Tin of Chopped Tomatoes
1 Tin of Red Kidney Beans
1 Chopped Red Pepper
1 Tin of Sweetcorn
Half a Pack of Mushrooms
2 Medium Red Onions Chopped
2 Garlic Cloves, Peeled and ¿nely Chopped
1 Tsp Chilli Powder
1 Tsp Ground Cumin
1 Tsp Ground Coriander
Large Lettuce Leaves
Add some oil to your pan and cook your onions until soft, add in your mushrooms and red pepper with your garlic and spices.
Add in a spoonful of water and cook down, once slightly soft add in your tin of chopped tomatoes and kidney beans.
Simmer for 20 mins at a medium heat.
Once done, take your large lettuce leaves (your healthy taco shell) and fill with your yummy filling!
Top with a fresh squeeze of lime and a sprinkle of coriander to serve.
