    Cumin Spiced Basa Fillets

    For the fish:

    1 tbsp Olive Oil

    3 Basa Fillets, defrosted

    tsp Chilli Flakes

    tsp Ground Cumin

    Pinch of Salt and Pepper

    For the lime yogurt:

    4 tbsp Greek Yogurt

    Juice of half a Lime

    Fresh Mint

    To serve:

    Fruity Couscous

    Method

    Pre-heat your oven to 220°c / 200°c fan / gas mark 8.

    Pour the oil into an ovenproof skillet or baking tray.

    Place the defrosted basa fillets into a bowl.

    Sprinkle evenly with the chilli flakes, cumin and a pinch of salt and pepper.

    Use your hands to gently rub the spices all over the fish.

    Use oven gloves to take the skillet or baking tray out of the oven.

    Place the fish fillets into the skillet or baking tray – you should hear a satisfying sizzle.

    Roast in the oven for 10 minutes.

    Remove from the oven and carefully flip the fish.

    Return to the oven for another 10 minutes, or until golden brown.

    Meanwhile, mix together the Greek yogurt and lime juice in a small bowl.

    Top with finely shredded fresh mint.

    Serve the fish with the mint and lime yogurt, and some of our fruity couscous on the side.
