Balsamic soaked cherries layered on pizza with crumbled feta and salty Serrano ham.
150g Cherries (stones removed)
30ml Balsamic Vinegar
30ml Water 2 Garlic Cloves, peeled and finely diced
Pinch of Chilli Flakes
1 sprig Fresh Rosemary
Twin pack Stonebaked Pizza bases
2 Red Onions, peeled and thinly sliced
30ml Olive Oil
100g Tomato Salsa
100g Mozzarella, grated
100g Feta Cheese
6 slices Serrano Ham
Fresh Basil Leaves
Black Pepper
1 Baking Tray, greased
Pre-heat the oven to 235°C/Gas Mark 8.
Place the cherries, balsamic vinegar, garlic, chilli flakes, rosemary and water into a small saucepan, cover and cook gently for 15 minutes, then allow to cool in any juices.
Fry the onions in the olive oil until caramelised.
Place the Pizza bases on the tray.
Spread the tomato salsa over the bases, sprinkle over the grated mozzarella and top with onions.
Crumble over the feta cheese, then pour over the cherry mixture.
Fold over Serrano ham slices on top and bake in the oven for the length of time the pizza base instructions say and until risen and browned.
Slice into wedges, scatter with fresh basil leaves and serve immediately.
