Mozzarella Snowman

Ingredients
- 100ml Balsamic vinegar
- 2tbsp Soft brown sugar
- 4 Mozzarella balls
- 140g Cherry tomatoes
- 50g Basil leaves, preferably large/medium sized leaves
- 4cm long chunk of carrot
- Salt and cracked black pepper, to season
Method
- To make a balsamic glaze, add the sugar and vinegar to a small frying pan on a high heat. Reduce the liquid until it’s a thick syrup and allow to cool.
- Cut 2 small conical batons/triangular shapes of carrot for the snowman’s nose.
- Cut each basil leaf (reserving two sprigs) into a holly shape using some clean, small scissors or a small, sharp knife.
- Arrange the mozzarella balls on a plate to create 2 snowmen and add the carrots as noses.
- Then, add the balsamic glaze to a piping bag, snip off the end and pipe a wreath of branches around the snowmen’s pipes, eyes and mouth. Add some basil sprigs to create a bow tie/scarf.
- Arrange the tomatoes in bunches to create some berries with the holly-shaped basil leaves around the snowmen to make a wreath. Season well and serve.
