Mozzarella Snowman

Ingredients

  • 100ml Balsamic vinegar
  • 2tbsp Soft brown sugar
  • 4 Mozzarella balls
  • 140g Cherry tomatoes
  • 50g Basil leaves, preferably large/medium sized leaves
  • 4cm long chunk of carrot
  • Salt and cracked black pepper, to season  

Method

  1. To make a balsamic glaze, add the sugar and vinegar to a small frying pan on a high heat. Reduce the liquid until it’s a thick syrup and allow to cool.
  2. Cut 2 small conical batons/triangular shapes of carrot for the snowman’s nose.
  3. Cut each basil leaf (reserving two sprigs) into a holly shape using some clean, small scissors or a small, sharp knife.
  4. Arrange the mozzarella balls on a plate to create 2 snowmen and add the carrots as noses.
  5. Then, add the balsamic glaze to a piping bag, snip off the end and pipe a wreath of branches around the snowmen’s pipes, eyes and mouth. Add some basil sprigs to create a bow tie/scarf.
  6. Arrange the tomatoes in bunches to create some berries with the holly-shaped basil leaves around the snowmen to make a wreath. Season well and serve.
