For a brilliant breakfast, whip up this delicious Apple and Berry Granola compote.
2 x apples
100g blackberries
100g cherries
1 x 80g pack pomegranate seeds
140g Granola
1 x 300ml crème fraîche
Juice x 1 lemon
50g brown sugar
½ teaspoon ground cinnamon
125ml water
1. Stone the cherries
2. Core the apples and cut into eighths
3. Mix the lemon juice with the water
4. Put the apple wedges into the water and stir – to prevent browning
5. Preheat the grill to high
6. Drain the apples and put onto a baking sheet – grill 6/ 8 mins – turning as you cook till slightly browned
7. Put the lemon juice water, sugar and cinnamon in a small saucepan and heat to melt the sugar
8. Add the cherries and blackberries and gently cook for a couple of mins
9. Add the grilled apples
10. Divide the mixture between 4 bowls along with the granola, pomegranate seeds and crème fraîche and serve slightly warm
