A classic chocolatey sweet treat, and so easy to make!
250g Self-Rising Flour
100g Icing Sugar
200g Irish Butter at room temperature
2 Medium Egg Yolks
1 tsp Vanilla Essence
100g Dark, White or Milk Chocolate Chips
8cm Round Cutter
Baking Sheets
A little extra Flour
Preheat the oven to 170C/325F/Gas Mark 3
Whisk the flour and the icing sugar together in a bowl with a balloon whisk
Cut the butter into small chunks and rub into the mixture until it has a crumbly consistency
Add the egg yolks, vanilla essence and the chocolate chips, and mix well
Put some flour on a board, then roll the mixture out to the thickness of a 1 Euro coin
Cut out the biscuits with your cutter
Gently gather the spare dough, re-roll and cut
Transfer the biscuits to a greased baking sheet, leaving space for them to spread a little
Bake in the oven for 15 mins
Allow to cool
For the classic cookie experience, serve with a glass of milk
