A fun spin on a glass of bubbly. Try this zingy champagne mojito and you won't be disappointed.
100ml Old Hopking White Rum
50ml Lime Juice, freshly squeezed, plus Lime wedges to serve
2 tbsp The Pantry White Sugar, Caster is best
Bunch of Mint Leaves
Gianni’s Ice Cubes, crushed
Champagne Brut by Philzot, to top up
Split and pour the rum, lime juice and sugar into 2 tall glasses.
Add around 5 mint leaves to each glass.
Fill each glass with crushed ice then stir ingredients until combined.
Top with Champagne and garnish with a lime wedge and a sprig of mint.
