Cranberry Thyme & Clementine Butter
7g fresh Thyme
40g dried Cranberries
200g Salted Butter, at room temperature
1 large clove of Garlic
Grated Zest of 2 Clementines
Salt and Black Pepper
Finely chop the thyme and the dried cranberries, then peel and mince the garlic.
In a bowl add the butter, thyme, cranberries, garlic and zest.
Season with a little salt and black pepper, mix well and divide into six pats.
Keep chilled in the refrigerator before using.
